From The Coast To The Mountains

Pat's Broccoli Salad

1 or two bunch broccoli, chopped *5 serving - 1 bunch 10 serving - 2 bunches

1/2 cup of purple onions,

chopped 8 ounces raisins

1/2 cup of sugar

*To these basics, you may wish to add* 8 slices crisp bacon, crumbled

1 tomatoes, sliced or diced

1 cauliflower,

chopped 8 ounces sunflower seeds

8 ounces of salad dressing (Miracle Whip) *some like Mayo*

1 cup of seedless green grapes

1/2 fat free sour cream

Mix all ingredients.

Garnish by sprinkling on ripe or stuffed olives.

Serve on a platter surrounded by sliced cantaloupe and honey due melons.

Pat's Cantaloupe Fruit Bowl

Servings for 10 The recipe is good for a individual fruit servings.

Every person has their own Fruit Bowl.

5 - Cantaloupe

5 - Apples

5 - cups of seedless grapes (white or red)

2 - cups of dark sweet cherries

5 - cups of blueberries

5 - cups of pineapple

5 - cups of watermelon

5 - cups of honeydew melon

4 - cups of strawberries

Cut Cantaloupe in half , then scoop out balls or dice into cubes.

Scallop the edges of the Cantaloupe.

If you do not have a melon ball scooper, you may just cut the melon fruit into small bite size cubes.

Mix all the fruit together, and chill.

Core the apples and slice in then wedges, then sprinkle with lemon juice.

Combine all the fruits and place in cantaloupe shells. Garish with mint sprigs.
