Granny Aman's Collard's
Wash Collards
Add bacon grease about 1/4 cup - to just enough water to that will cover collard, not a lot, then add salt meat in a six quart boiler and bring to boil.
Add collard's to boiling water.
Bring back to a boil then quickly
Turn off heat, put a lid on the boiler and let collards cook down about 15 minutes.
By cooking them in this manor they stay pretty and green, just like they came from the garden.

Granny Squash Casserole
10 Squash peal and cut up to casserole dish
Add 1 onion
Add salt and pepper to taste
Add 1 egg
Add 1 cup of bread or cracker crumbs
Add 1 cup of Velveeta cheese
Cook on 350 degrees about 35 minutes.
Take out and add shredded cheese to top of dish.
Put back in oven until cheese is melted.
Take out and serve hot
