South Louisiana Cajun Recipes

Pat's Cajun Crab Salad
8 - servings
1 or 2 large heads of iceberg lettuce
2 lb.'s crab meat 4 tomatoes, chopped
2 green peppers, cut in chunks
2 - red peppers, cut in chunks
8 green onions, cut in strips
1 - jar of pimentos
1/4 cup of white wine (you can buy the alcohol free)
Italian dressing or Mayo Tear the lettuce into bite-sized pieces.
Place the crab meat, lettuce, tomatoes, green and red peppers and onions in a
bowl and toss lightly.
Add White Wine, Italian dressing or Mayo and toss lightly again.
Serve on individual plates garnished with pieces of pimentos.
