North Louisiana Bayou Salad Recipes

Louisiana Bayou Spinach Dip
2 10-oz frozen chopped spinach and drain
1 – 8 oz of sour cream
2 – cups of Mayo
2 – packages of dry ranch dressings
½ chopped green onions
¼ - cup of chopped parsley or parsley flakes
Salt and pepper to taste
If you would like it spicy add ½ teaspoon of cayan pepper
Mix chill and Saved

Beouf River Chicken Salad
Makes 4 servings
4 cups cooked chicken, cut in 1/2 cubes
1 cup dices celery
1 cup green seedless grapes, halved
3/4 cup toasted, slivered almonds
1/2 cup mayonnaise
2 tablespoon sugar
1 tablespoon chopped fresh parsley
Salt and White pepper to taste
1 Pineapple
Almond slivers
Leaf Lettuce
Assorted fresh fruit.
Combine the first 8 ingredients in a mixing bowl. Season to taste with salt and pepper; chill well. Cut the pineapple in quarters, lengthwise, keeping the leaves intact. Remove core and dice pineapple pulp; set aside. Fill each pineapple shell with chicken salad, sprinkle with almonds. Place each shell on a plate lined with lettuce; surround with diced pineapple and assorted frets fruit. Serve chilled.
